Chili Con Carne

  • 2 lbs of Lean Ground Beef (you can cook in frying pan before to remove most of the grease, then place into crock pot.
  • 1 Spanish Onion- diced
  • 1 Red/Green Pepper- diced into pieces that fit onto a spoon
  • 2 Garlic Cloves or 1 Tablespoon minced garlic
  • 1 Tablespoon of Cumin
  • 1- 28 oz Can Diced Tomatoes (organic if possible)
  • 1 Can of Kidney Beans (drain and rinse thoroughly)
  • 1/2 Cup Ketchup
  • 1 Jalapeno Pepper -dice, it might be a good idea to wear gloves handling this!  (remove seeds if you want less spice)
  • Salt & Pepper to taste
  1. Place all ingredients in crock pot and let cook on the 8 hour high cycle.  If you find that it is runny (as crock pots collect moisture), you can add cornstarch to thicken remember to mix corn starch into cold water, then mix into hot liquid.
  2. Garnish with Cheese, Sour cream, Green Onions
