During my adventure in the Paleo challenge I came across this idea.
Coconut Flour Pancakes
- 3 Eggs
- 5 Tablespoons of Coconut Flour
- 1/4 teaspoon of Baking Soda
- 1/8 Cup of Water
- 2 Tablespoons of Coconut Oil (to oil the pan)
Mix dry ingredients together–then blend with wet. Heat frying pan, add coconut oil. Place spoonful of batter in, press down with back of spoon to form into shape. it will be browned once ready to flip.
I served our pancakes with fresh fruit, some butcher cut bacon and Canadian Maple Syrup.
