No Noodle Chicken Soup

No Noodle Chicken Soup

No Noodle Chicken Soup   (great cure for a head cold)

  • 2 Chicken Breasts
  • 2 Carrots diced
  • 2 ribs of celery diced
  • 1/2 of Spanish Onion
  • 8 Cups of Water
  • Paprika
  • Chili Powder
  • 1 Bay Leaf
  • 1 Can of crushed organic Tomatoes
  • 1 Bunch of Flat Leaf Parsley
  • 2 Cups Coconut Milk
  • 1 Avocado

Place whole chicken breast in crockpot with the water, bay leaf, paprika, chill powder.  I set mine for 8 hours on low.  Once done, take chicken out, shred with 2 forks.  Find Bay leaf (remove).  Place chicken back in crock pot, add tomatoes, parsley & coconut milk.  Let it simmer for another hour.  Season with salt & pepper to preferred taste

 

Ready to serve–add Avocado.
