Oven Roasted Chicken

Oven Roasted Chicken

Oven Roasted Chicken
1 whole grass fed Chicken ( 4lbs roaster)
4 Tablespoons of butter
2 garlic gloves
4 sprigs of Thyme
1 lemon (lime will also work)
1 Tablespoon of Peppercorns
1/2 cup of water
Salt & Pepper to taste

Pat dry the Chicken with a paper towel. Cut the lemon in half and place both pieces in the cavity of the chicken with the sprigs of Thyme. Next you have to take your fingers and make a pocket between the skin of the chicken and the meat, this is where you are placing the butter equally underneath the skin. Place in oven safe container, season the chicken, add the water and remaining ingredients. Place in oven at 375′ for 45 minutes. Check to see temperature of chicken…you are looking for the juices to run clear and a temperate of 180′ F. Place back in oven for 15 minutes if it needs more time ( this will depend on weight of the roaster).
