Beef & Spinach Meatballs
- 1lb of Lean Ground Beef
- 1 Tablespoon of minced Garlic
- 3 Cups of Spinach
- 1/4 Cup of Parmesan
- 1 Egg
- 2 Tablespoons of Dijon Mustard
- Salt & Pepper to taste
Mix all ingredients together with hands (spinach will break up on its own) and then ball into 1″ balls. Place in sauté pan with Butter and let cook until internal temp is 165′ F.
You can serve these with rice, potatoes, pasta, salad, cauliflower rice. If you make them smaller you can put them in soup etc.
