Sweet Potato & Pork Pie (egg based)

Sweet Potato & Pork Pie (egg based)
  • 6 strips of Bacon diced
  • 1 Sweet Potato grated
  • 2 Zuchinni diced
  • 6 eggs whisked
  • 2 Tablespoons of Dijon Mustard
  • 3 Cups of diced Pork Tenderloin (cooked)
  • 1 Cup of Cheddar Cheese- grated
  • Salt & Pepper to taste

Sauté bacon in pan until crispy,  place grated sweet potato on top.  Press down with spatula.  After 2 minutes place diced Zuchinni on top, then add diced Pork loin.

In a separate bowl whisk together eggs, mustard and 1/4 water.

Pour mixture on top of pork in pan and season.

Leave on stove top for 2 minutes, add 1 cup of grated Cheddar Cheese.  Place in oven for 30 minutes at 350′.

You will know when fully cooked when the egg mixture is formed and not watery.
