Sweet Potato & Pork Pie (egg based)
- 6 strips of Bacon diced
- 1 Sweet Potato grated
- 2 Zuchinni diced
- 6 eggs whisked
- 2 Tablespoons of Dijon Mustard
- 3 Cups of diced Pork Tenderloin (cooked)
- 1 Cup of Cheddar Cheese- grated
- Salt & Pepper to taste
Sauté bacon in pan until crispy, place grated sweet potato on top. Press down with spatula. After 2 minutes place diced Zuchinni on top, then add diced Pork loin.
In a separate bowl whisk together eggs, mustard and 1/4 water.
Pour mixture on top of pork in pan and season.
Leave on stove top for 2 minutes, add 1 cup of grated Cheddar Cheese. Place in oven for 30 minutes at 350′.
