Balsamic Sweet Potato & Bacon Hash 

Balsamic Sweet Potato & Bacon Hash 

  • 2 Sweet Potatoes peeled and diced into small cubes
  • 8 slices of bacon cut into strips
  • 1 teaspoon garlic
  • 10 fresh chives minced
  • 1 teaspoon onion powder
  • Balsamic vinegar
  • Garlic olive oil
  • Salt and Pepper to taste
  • 2 eggs

Heat up frying pan, place bacon in start cooking.  Add in sweet potatoes and season.  Once cooked ( bacon crispy and sweet potatoes soft and starting to brown 8-10minutes).  Place in serving dish and put pan back on heat, crack eggs into pan, season and scramble in the pan.  Dish eggs on top of sweet potato mixture.  Garnish with anything you have in the fridge( we used Arugula) Drizzle the olive oil and Balsamic on top and enjoy!
