Lemon Smashed Potatoes
- 8 mini red potatoes cooked until tender and halved
- Lemon Olive Oil
- 4 Tablespoons of Parmesean
- Salt and Pepper
- Sprinkle of garlic powder
Get oven safe pan, place potato halves skin side up, press down with fork to Smash. Drizzle with olive oil, Parmesean, garlic, salt and pepper. Place in oven on broil for 5 minutes.
We served this with a roasted Chicken and Brussels Sprouts & Kale salad.
