Old Cheddar Mac N’ Cheese

Old Cheddar Mac N’ Cheese

  • 2 tablespoons of butter
  • 2 tablespoons of all purpose flour
  • 1 1/2 cups of Old Cheddar Cheese (400 grams)
  • 3 cups of 1% Milk
  • 1/2 cup 30% Sour Cream
  • Salt & Pepper
  • 1/2 cup Graham Crackers (ground)
  • 500gr of Penne Pasta (3/4 of a 900gram bag)
  • 2 L of salted water (to cook pasta)

In a pot melt the butter until foamy, add the flour and mix until all incorporated–this is making a roux (use wooden spoon).  Let cook for 1 minute.  Take off heat, using whisk, incorporate all milk to mixture (Béchamel)–season with salt and pepper.  Placing back on heat, add sour cream.  On low heat, bring to boil (5-7 minutes).  While this is cooking, start cooking pasta (4-5 minutes only–you do not want the pasta cooked all the way).  Add cheese to Béchamel sauce.  Take 11 by 7 inch pan (or pan of your choosing) and grease it with butter, add strained noodles to it, add sauce to it.  Mix so all noodles are coated.  Sprinkle Graham Crackers on top. Finish in 400′ F oven for 20 minutes (or until bubbling). Garnish with Parmesan cheese.
