Chicken & Bacon Penne in O N E pan!
Chicken & Bacon Penne (a spin on a healthy Alfredo)
- 3 Chicken Breasts
- 8 strips of bacon
- 1 Tablespoon of minced garlic (2 cloves)
- 3 Tablespoons of Butter
- 1/2 of All Purpose flour
- 2 Teaspoons of Thyme, or a sprig thrown in
- 1 Bayleaf
- 1 Tablespoon of Child Flakes
- Salt & Pepper to taste
- 1 L of Chicken Stock
- 1/2 cup of Milk
- 1 L of Water
- 1 Cup of Cheese (Cheddar or Mozzarella or Parmesan–or all for those cheese lovers)
- 450g of Penne Pasta
Turn on Electric Skillet or large high walled stove top pan, Add garlic, sliced bacon and chicken, cook until golden brown. Add Butter, let melt then add Flour over meat and butter mix–let cook for 1 minute, season with salt, pepper, chili flakes, thyme and bayleaf (leave whole). Add Chicken stock–add noodles, let cook for 5 minutes, Add Water, let cook checking every 5 minutes for about 20 minutes. Add milk and cheese to finish. Instead of a heavy cream based pasta, you are lighting it a bit with the stock and milk, leaving you satisfied but not full…unless you eat the whole pan and then you are snookered. This makes probably 8 good size portions–great to reheat for leftovers!
