Blueberry Muffins

  • 1/2 cup of soften Butter
  • 1/2 cup Brown Sugar
  • splash of Vanilla
  • 2 Eggs (beaten)
  • 2 cups of Flour
  • 2 teaspoons of Baking Powder
  • 3/4 Cup of Milk
  • 1/4 cup of Lemon Juice (Approx 2)
  • 1 1/2 cups of Blueberries

 

Cream Butter and Sugar together until lighter in colour, add vanilla and beat in egg one at a time, add dry ingredients and slowly fold in, add milk, lemon juice.  Once all incorporated together, fold in blueberries.  Place in Muffin cups.  Bake at 350′ for 35-45 minutes (depending on oven).  Place on middle rack!
